Only available during this time of year, New Harvest Matcha allows you to savour the flavour of freshly picked tea leaves. Unlike our matcha offerings available throughout the year, each of which has its own consistent flavour that is created through a process in which the tea leaves are picked, immediately processed, and then rested for a summer to mature, New Harvest Matcha is distinctive in that it allows you to savour the flavour that is unique to each year’s new harvest. Being able to enjoy the different tastes of each year’s harvest is one of the true joys of this matcha. For example, 2023’s New Harvest Matcha had a wonderful mellow flavour, while 2024’s matcha possessed wonderful sweetness.

New Harvest Matcha 2025 is rich with shincha’s characteristic freshness. It has mellow sweetness, verdant fragrance, and a subtle, slightly bitter aftertaste.
The first thing that catches your eye is the colour of this matcha. Its vivid green colour brings to mind tea fields in spring awash in sunlight. With each sip, rich sweetness and fragrance bathe the palate, followed by shincha's characteristic verdant fragrance, and then a subtly fruity, slight bitter aftertaste. It has a light taste that is easy to drink for all people, including those new to drinking matcha straight.

How/when to enjoy it?
I enjoy this light, easy-to-drink New Harvest Matcha throughout the day, both at home and when I’m out and about. Prepared as standard usucha, it has a fresh sweetness and a pleasant, slightly bitter taste. I have it as my morning matcha, or at the beginning of a week I want to start off in a relaxing way.
When I relax in the afternoon, I like to bring out greater mellow flavour by changing things up a bit and whisking the matcha a little more than usual. Preparing the matcha as koicha, or on the thick side, allows me to savour the most umami. I drink it that way in order to change gears and really concentrate.
How do Ippodo staff enjoy it?
I like preparing it as Shaken Matcha when I want to savour its sweetness in a more casual way. All I have to do is put the matcha and chilled water in my bottle or flask (2g of matcha and 200 ml of chilled water), and shake it in order to enjoy the fresh taste of New Harvest Matcha!

Basic usucha (matcha)
- 2g
- 60ml
- 80℃
- 15 sec.

1 Sift 2g of matcha (1.5 heaped tea ladles or 1 level teaspoon)

2 Add 60ml of hot water (80°C)

3 Whisk vigorously for 15 seconds
Preparing the usucha quickly is the secret to enjoying the full fragrance.
Basic koicha (matcha)
- 4g
- 30ml
- 80℃
- 15 sec.

1 Sift 4g of matcha (3 heaped tea ladles or 2 level teaspoons)

2 Add 30ml of hot water (80°C)

3 Mix slowly with a whisk for 15 seconds
