Prepare it anyway you like—with freshly boiled hot water, hot water that has been cooled slightly, or cold brew it with chilled water. Fully savour the taste of each year’s shincha while the season lasts.

Vegetables that express verdant freshness, like broad beans or asparagus. Or perhaps foods associated with refreshing fragrances, like lemon cake.

The taste of shincha changes every season. Its tender characteristics come from the freshly picked tea buds. Brew for slightly less time than usual.
