Basic usucha (matcha)
- 2g
- 60ml
- 80℃
- 15 sec.

1 Sift 2g of matcha (1.5 heaped tea ladles or 1 level teaspoon)

2 Add 60ml of hot water (80°C)

3 Whisk vigorously for 15 seconds
Preparing the usucha quickly is the secret to enjoying the full fragrance.
Basic koicha (matcha)
- 4g
- 30ml
- 80℃
- 15 sec.

1 Sift 4g of matcha (3 heaped tea ladles or 2 level teaspoons)

2 Add 30ml of hot water (80°C)

3 Mix slowly with a whisk for 15 seconds

This tea smells so fragrant and sweet, almost like matcha milk candy.
My favourite way to prepare Shoin is by first making it into a thick paste, then slowly adding cold water and ice. For me, this method really brings out the character of the tea.
The flavour starts with a full-bodied umami hit at the front, followed by a slight bitterness that quickly transforms into a cool lingering sweetness in the aftertaste.
Compared to stronger and more aggressive matcha profiles, I find Shoin softer and more elegant, with a sweetness that reveals itself more gently over time. -

This blend has the familiar “grassy” taste but it’s far from being like any other blend on the market.
I fell in love with the deep and satisfying flavour. -

I have tried Ippodo's less premium lines, such as Kan and Ikuyo and was expecting a stronger flavour profile for Shoin. It has a medium umami flavour with no hints of sweetness. Very mild profile. No bitterness, but this is its strength compared to their other lines.
