What is this year's shincha like?
Shincha 2025 has a soaring fresh green fragrance.
Its taste is full of rich umami that lingers long after swallowing. There's only a hint of astringency, and we recommend this tea for beginners as well.
How/when to enjoy it?
Prepare it anyway you like—with freshly boiled hot water, hot water that has been cooled slightly, or cold brew it with chilled water. Fully savour the taste of each year’s shincha while the season lasts.
What to enjoy it with?
Vegetables that express verdant freshness, like broad beans or asparagus. Or perhaps foods associated with refreshing fragrances, like lemon cake.

The taste of shincha changes every season. Its tender characteristics come from the freshly picked tea buds. Brew for slightly less time than usual.

1 Use 10g of leaves (2 tablespoons)

2 Add 210ml of hot water (80°C)

3 Serve 40 seconds after beginning to pour the hot water.

It’s really delicious, not only the first steep, but the 2nd and 3rd. However, 80C water unexpectedly draws out way too much bitterness. 60C water is just right.
