Each year, after enduring the cold winter, tea trees awaken from their slumber as soon as it starts to warm, and their leaves shoot up with incredible energy. The leaves are then picked, processed and shipped as Shincha, our limited sencha green tea.
What is Shincha?
Shincha is a special release of sencha green tea that is produced and shipped just days after it was harvested. Our Shincha has an amazingly fresh fragrance and a vibrant, naturally sweet and slightly bitter taste, like spring vegetables.
Fans delight in the nuances in this tea’s flavour, which change year-to-year depending on the climate in region. Join us in anticipation- what unique flavour will this year bring?
Where is Shincha grown?
Our Shincha comes from the mountainous region in southern Kyoto Prefecture. In this region, the tea trees grow on steep inclines that are quite a hike to climb up. The days are sunny and warm, while the nights get surprisingly cool, and in these conditions, the tea trees work extra hard to pull nutrients and energy from the soil. They then convert that energy to send out robust new buds in the spring. As a result of this micro-climate, teas from this region are known for their outstanding fragrance.
How is Shincha different from our regular sencha?
Like Shincha, our regular sencha blends are also harvested only once per year in the late spring. We allow the regular senchas to rest until they develop a relaxed, mature flavor. We then blend them with previous harvests to produce a consistent product sold throughout the year. While our regular sencha selection has a calm, mature character and consistency, Shincha is limited and has a powerful, fresh, energetic character and unique tasting notes each year. We look forward to tasting the 2025 release with great anticipation.

Its taste is full of rich umami that lingers long after swallowing. There's only a hint of astringency, and we recommend this tea for beginners as well.
