Savouring Ummon-no-mukashi under a harvest moon

Japan has a tradition of offering dango (dumplings made from rice flour) and susuki (pampas grass) to the harvest moon in hope of a good harvest. The date of the harvest moon varies from year to year, falling between mid-September and early October. Times like this, when you can enjoy matcha while gazing upon a beautiful, shining moon, become precious memories.

Sift 2g of matcha.
Pour on 60ml of hot water at 80°C.
Whisk for 15 sec.

Don’t whisk too long.
Whisking too long can cause the characteristic flavour of matcha to be lost.
