Lasagna with iced Wakayanagi

Refreshing Wakayanagi goes beautifully with lasagna, which has a rich combination of flavours stemming from the layering of delicious sheets of pasta with Bolognese and béchamel sauces. For a crisper flavour, we recommend preparing Wakayanagi iced rather than cold brewed. First brew it on the strong side using boiling hot water, then fill a cup or glass with ice and pour the tea over it, all at once.

The key is to cool the tea down right away. Fill a glass with lots of ice, and as soon as you pour on the tea, stir it well with a stirrer. It's ready to drink once the outside of the glass has become very cold.
