An eclair definitely makes a delicious combo with coffee or cafe au lait, but why not try matcha instead of coffee? Matcha goes surprisingly well with the sweet chocolate and the rich cream filling.

Sift 2g of matcha powder.
Pour on water at 80°C, and whisk for 15 sec.
Pour into a mug.

Sift the matcha.
Pouring hot water onto clumps of matcha powder that form due to static makes the clumps even harder. Sifting the powder before adding water results in a smoother matcha.
