How do you enjoy it?
When the kids come in from the cold, the first thing I do is boil water and prepare iribancha. Once they have washed their hands and sat down, the iribancha is waiting for them at just the right temperature. We all enjoy a little break together, blowing on our hot tea as we relax.
Iribancha is low in caffeine, so it’s OK for the kids to drink it in the evening. We serve it to them cooled down a little with a couple of ice cubes after they get out of the bath. Once they’ve rehydrated, it’s bedtime. That’s the daily routine in our home.

How do you prepare it?
In our home, I make a large batch of Japanese tea for family members to enjoy however they prefer. When making a large batch of tea, I recommend mixing several infusions together, keeping the same leaves. As each potful is ready, I add it to the others in a larger teapot. It generally takes one to two topups to fill the larger pot.
Preparing the children’s flasks:
Our kids like their tea cold, so I begin by putting plenty of ice in their flasks. Before sending them off, I pour on tea from the larger teapot I prepared earlier.
Tea with meals:
My husband and children like their drinks cold. Even during winter, I cool their mealtime tea down by pouring it into cups filled with ice.
Tea with afternoon snacks:
I like my tea hot, so when we have tea with snacks, I pour it directly into the teacups.

After dinner, we sometimes have a special dessert, and we really look forward to it. In our home, we have matcha whenever we get seasonal Japanese wagashi sweets like kashiwa mochi, minazuki, and sakura mochi. Even the children get excited and enjoy the process of preparing the sweets and sifting the matcha powder.
