What do you like about it?

I put the tea leaves, some ice, and cold water in my glass teapot and cold brew it in the refrigerator. When I take it out after about half an hour, I first look at how the tea leaves have unfurled. I pour the tea out into a small ochoko sake cup made of ultra-thin usuhari glass, and drink it while appreciating shincha’s distinctive vivid green colour.
In the early afternoon on clear days in May, I savour the cold-brewed shincha slowly, like you would sake, while reading a paperback book in my other hand. Wonderfully luxurious times like this allow me to slowly relax and unwind.

What do you recommend pairing it with?

I like to drink wonderfully chilled cold-brewed shincha with caramel- or candy-coated nuts. With these sweet nuts and shincha packed with lots of ice-cold umami flavour, I end up indulging in too much of both.

What do you like about it?

I like the mild umami flavour of cold-brewed shincha. So, at night, I put the amount of tea leaves that produces the taste I like and cold water in a glass teapot that holds one litre, and let it sit overnight. Then, in the morning, I drink it to help me wake up. I put the rest in my travel bottle and drink it while I work.
When I have shincha with meals at home, I prepare it with boiling hot water, which produces a clean, bitter taste. I like enjoying the fresh, bitter taste of shincha.

What do you recommend pairing it with?

Shincha prepared with boiling hot water goes wonderfully with raw fish, like sashimi or kaisendon (a bowl of rice topped with raw seafood)! It’s out of this world!

What do you like about it?

I recommend preparing it slowly with teabags and hot water that is slightly cooled. When you take the time to brew it slowly, shincha rewards you with its distinctive verdant fragrance and mild sweetness. It’s perfect for when you want to take a break.

What do you recommend pairing it with?

I recommend pairing it with kintsuba (a cubed confection of sweetened bean paste enclosed in a flour crust). The mild sweetness of the bean paste goes well with the refined and refreshing taste of shincha.
