When you’re feeling a bit peckish, shoyu senbei (soy sauce-flavoured rice crackers) baked to crispy, crunchy perfection really hit the spot. Paired with refreshing cold-brewed Wakayanagi, you’ll find it hard to stop reaching for more of these savoury, salty-sweet senbei.

Cold brewing draws out the flavour of Japanese tea slowly, so there is no need to rush and strain out the leaves as soon as it has brewed for an hour. It’s perfectly fine to put it in the refrigerator before going to bed, and strain it when you pour your tea the following morning.
