Minazuki with Shoin-no-mukashi Matcha

In June, Kyoto shops selling Japanese sweets offer minazuki, which is made of chewy mochi-like uiro topped with cooked azuki beans. It has a pleasing, simple taste, and goes wonderfully with cold matcha, made by whisking matcha as usual, with hot water, and then adding ice.

Sift 2g of matcha.
Pour on hot water and whisk for 15 seconds.
Add desired amount of ice.
